Below & Above, a truffiere and vineyard located in the Southern Forest Region (Pemberton), has chosen Subiaco for their new Below & Above Truffle HQ: a state-of-the-art truffle processing facility that will serve as a new distribution hub for their prized tuber melanosporum truffles. Additionally, the space will also function as a venue for hosting educational workshops and special events centred around celebrating gourmet foods and fine wines.
Below & Above has created a captivating synergy by cultivating black winter truffles (Tuber melanosporum) underground while producing limited batches of Pinot Noir, Chardonnay, and Merlot above ground with the expert guidance of renowned winemaker Bruce Dukes. Their wines embody modern restraint and elegance, reflecting a commitment to holistic agricultural practices focused on soil health and environmental stewardship. Their meticulous methods ensure truffles with exceptional aroma and flavor, showcasing their dedication to quality. The limited truffle season, running from early June to August, captures the essence of Pemberton’s natural beauty and biodiversity.
