Subi Spritz Brings Back the Aperitivo Trail with Aperol Spritz

Subiaco is all set to take you on an immersive journey of Italy’s most loved aperitif, Aperol Spritz, as part of Subi Spritz. The Aperitivo Trail with Aperol Spritz is a celebration of Italian culture that brings together 10 of Subi’s premium small bars and restaurants to offer a collection of exclusive cocktails for you to savour.

From 10 to 19 March, the Aperitivo Trail with Aperol Spritz will take you on a delightful journey across Subiaco. You will have the chance to taste the classic Italian cocktail with a twist and indulge in a selection of pasta dishes.

The festival features an array of exclusive cocktails at La Condesa, Spirit of Little Things, The Village Bar, Bar Amelie, Subi Hotel, Cherubino City Cellar, Bark Subiaco, Lums Wine Bar, Shui Subiaco, and Juanita’s. These bars have taken the traditional Aperol Spritz and created their unique versions that are a must-try.

The Village Bar has the La Padua made with Aperol, freshly squeezed lemon, Cointreau, and prosecco. La Condesa has the Peachy Spritz made with Tequila, blood peach, Pimm’s, lemon, and fizz. Little Things Gin is shining the light on their very own Little-cello Spritz, which is a house made limoncello made with their Australian Botanical gin and turned into an Italian classic using prosecco and soda.

Bar Amelie has two unique Spritz options; the ‘Amelie meets Hugo Spritz’ and the ‘Late Summer Blues Spritz’, a non-alcoholic option with Ovant Verve, Mint & basil Syrup topped with soda. Subi Hotel has the La Mûre Spritz made with prosecco, gin, Crème de Mure, elderflower syrup, mint, lemon, and soda. Cherubino City Cellar has the Sanguine Spritz made with Four Pillars Blood Shiraz, Strawberry-Vanilla Syrup, Lime, and soda water. Lums Wine Bar is mixing up the Whitchy Spritz, made with Liquore strega, prosecco, soda, and fresh thyme. The new kid on the block, Shui Subiaco, will offer a Lychee Hugo made with lychee liqueur, elderflower, prosecco, soda, mint, and umami. Juanita’s has the Zen Amaro, made with Averna Amaro, Lime, Ginger, and Ginger Ale.

The cocktail specials are perfectly paired with a selection of pasta dishes at Subi Hotel, such as the Blue manna crab & tiger prawn fettuccine with cherry tomato sugo, chilli, basil, and fried capers, and the Porcini mushroom Casarecce pasta with slow-roast tomato and hazelnut pangrattato for vegetarians.
